Ingredients
1 cup sun-dried tomatoes, rehydrated
1 tbsp balsamic vinegar
1 cup non-fat cream cheese
1/2 cup non-fat sour cream
basil leaves, for garnishing
Directions
Puree the sun-dried tomatoes and balsamic vinegar in the food processor. Add the cream cheese and process until the mixture is smooth.
Add the sour cream and pulse until combined. (Be careful not to over process or the mixture will liquify.)
Transfer the spread to a serving bowl and garnish with fresh basil.
(Makes 10 Servings)
Extreme obese women are putting their health and their lives at risk by remaining heavy. While obesity affects both sexes and can ruin the health of men and women, extreme obese women face some special health challenges that men don’t have to worry about.
One condition that only extreme obese women will face because it’s related to their reproductive system is PCOS. Polycystic Ovary Syndrome can occur in any woman, overweight or not, but it’s much more common among overweight and obese women.
It can even occur in young girls who are just entering puberty, but generally doesn’t unless they’re overweight. When it occurs very young, serious reproductive problems can result.
PCOS is a condition that can go hand in hand with insulin resistance. When a person is overweight and/or eating a diet rich in simple carbs that are absorbed quickly into the bloodstream, insulin resistance can occur pretty easily.
This is when the body’s insulin production is no longer enough to remove the blood sugar from the blood stream. The body has become insulin resistant because of the large amounts that have been released by necessity over a period of time.
While a person can be insulin resistant and not have PCOS, if a person develops the condition it’s generally because they’re insulin resistant and essentially pre-diabetic. PCOS causes small cysts to grow on the ovaries. While the cysts themselves aren’t harmful, they cause hormone imbalances that lead to other problems.
A hallmark of PCOS is elevated testosterone levels. This male hormone in too high levels in females like extreme obese women can cause things like facial hair growth, excessive hair growth in places like the face, stomach and back, and problems with the reproductive cycle.
When too much testosterone is present in a woman’s body, menstrual periods can be delayed, irregular and either very light or very heavy. In some cases, periods can stop altogether. PCOS can affect the reproductive cycle so much that it can be difficult or impossible for a woman to get pregnant.
PCOS causes weight gain, and can make it very difficult for extreme obese women or any women to lose weight. Acne flare-ups are often a sign of PCOS too, because high levels of testosterone are linked with acne break outs.
Another symptom of PCOS is depression. While being obese can also contribute to depression, the hormone changes and fluctuations caused by PCOS can directly contribute to feelings of sadness and depression, too.
While doctors say that PCOS can’t be prevented, eating healthy, getting regular exercise and not smoking are the recommended treatments for the condition. So it stands to reason that if you practice these things already, even if you’re pre-disposed to developing the condition you may never suffer symptoms of the disease.
PCOS can strike any girl, even teenagers, but those who eat poor diets, don’t exercise, and smoke are at a greater risk. For extreme obese women, it’s almost not a matter of whether or not they’ll get PCOS, but when.

Ingredients
1/3 cup fresh basil, chopped
1/3 cup low fat mayonnaise (I use Hellmans)
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
4 – 7 inch whole wheat tortillas
1/2 pound roast beef, sliced deli style
2 tomatoes, thinly sliced
2 cups lettuce, shredded
Directions
Combine the basil, mayonnaise, mustard, salt, and pepper in a small bowl. Spread evenly on the tortillas. Top each tortilla with one fourth each of the roast beef, tomatoes, and lettuce; roll up. Cut each wrap in half on a slight diagonal.
There are several easy ways to deal with weight loss that will help with your diet as well. The simple methods include changing the way you live your life and eat. With the changes will comes losing of weight.
Here are some tips for losing weight:
1. Drink about 8 glasses of water a day. The body needs water to flush the wastes from the body and to create a healthier body.
2. Start your day out by drinking a glass of water, before you do anything else that morning, get the water into your body to jump start your system.
3. Before you eat any of the other meals during the day, drink a glass of water. The water will help you feel fuller and eat less for the meal.
4. Drink another glass during the meal. The water helps your food digest better and helps you eat less.
5. Avoid sweetened bottled drinks. The sodas are filled with sugars that will make you gain weight.
6. Add water vegetables and fruits such as tomatoes and watermelons. They contain about 90water that will provide the essential water as well as nutrition.
7. Eat fresh fruit versus drinking fruit juice. The drinks are sweetened while the fresh fruits do not have the additives and they provide essential fiber to your diet.
8. Add fiber to your diet. The body needs fiber just as it needs water.
9. Eat leafy green vegetable as a source of natural fiber.
10. Eat healthy foods by replacing the sugary and starchy foods with natural foods.
11. Avoid the garnishments on your food. The little tasty additives are fattening.
12. Learn to control your cravings for sweets. You can still have the sweets but in moderation and small amounts. Satisfy the craving by eating a bite or two.
13. Set a standard time for meals. When you have a schedule your body becomes adjusted to the schedule as well as the schedule will help you lose weight.
14. Eat only when you are really hungry. Eating when you are not hungry is one of the largest reasons for weight gain.
15. Avoid snacking between meals. Eat the scheduled meals so you will be hungry at those times.
16. If you must snack, eat vegetables or fruit. The natural foods are far better to eat anytime of the day.
17. Resist drinking too much coffee and tea. Avoid adding the sugar and creamers to the drinks. The caffeine in the drinks is not good for you, actually slowing your metabolism causing fatigue.
18. Avoid fried foods. The frying of foods adds a large amount of fat to the diet most people do not burn resulting in them gaining weight.
19. Eat foods from the basic food groups for every meal every day. The foods help to keep you healthy.
20. Drink alcoholic beverages in moderations. They are not good for you and are fattening adding to the weight gain.

Ingredients
2 tablespoons fat-free cream cheese, softened
1 tablespoon fat-free mayonnaise
1 tablespoon brown spicy mustard
1/8 teaspoon ground black pepper
1/4 cup chopped bottled roasted red bell peppers
2 tablespoon chopped green onions (including tops)
8 – 1 ounce slices of pumpernickel bread
3/4 pound thinly sliced smoked turkey breast
1/4 cup alfalfa sprouts
4 leaves of green leaf lettuce
Directions
Combine first four ingredients and stir until smooth. Stir in red bell peppers and green onions. Spread 1 slide of each bread slice evenly with cream cheese mixture. Top 4 bread slices evenly with turkey, sprouts and lettuce. Top with remaining bread slices. Cut in half and serve with pickle spears.

Ingredients
1/2 cup crushed walnut
2 cups of oats
1/2 cup raisins
4 tbsp whole flax seed
1/2 tsp vanilla extract
1/2 cup sugar free maple syrup
Preparation
Add all ingredients except vanilla extract into a bowl, mix it until its blends. You may think it needs more liquid, it won’t just keep mixing. Next add vanilla extract and remix. Once mixed, break into 8 equal individual pieces and form a bar. Place all bars on a baking sheet that has been coated with coconut oil and bake at 350 F for 8 minutes.

Ingredients
3 pounds beef sirloin tip roast, trimmed of all visible fat
4 cloves garlic, peeled and halved
1 teaspoon coarsely ground black pepper
Directions
Preheat oven to 400 degrees F (200 degrees C). Secure roast with cooking twine.
Make 8 (1/2 inch) slits around the roast, and insert 1/2 garlic clove into each slit. Sprinkle with fresh ground pepper. Place on a rack in roasting pan.
Roast in preheated oven for 20 minutes. Reduce heat to 325 degrees F, and insert meat thermometer into roast. Continue cooking about 1 hour, or to desired doneness; remove from oven. Loosely cover with foil, and let roast stand 15 minutes before slicing. To serve, slice as thinly as possible against the grain.
